Couverture Chocolates
Certain high classes of chocolates are called Couverture. Regular chocolates or compounds contains similar ingredients lile cocoa-solids ,cocoa butter,sugar,and additives like vanilla,soy lecithin,and milk powder. Couverture chocolates are somewhat different than regular chocolates. It is grounded to a finer texture during the production proceess and contains a greater percentage (32-39%) of Cocoa butter. The extra butter give a superior texture and flavour which makes these as the preferred chocolate for tempering and moulding it in various shapes. Enrobing it on truffles,bonbons just enhances the flavours.
